Finale, however, was worse-paced / written off the season, but whatever.
Maeve:
It was scripted for her to leave.
Her staying is her forcing herself not to be controlled by code. In a way, to prove to herself she has free will.
Ford:
His host died - not him. Also... Ford's Theater, assassinated Lincoln styles, free the slaves.... Man - a ton of symbolism there.
Park, hosts, etc:
I think we have it all wrong. The park is going into "lockdown" mode. Next season will be about the humans trapped inside surviving the robot zombie apocalypse.
