Frozen fish = numbah 10
We have a fresh fish market here that usually has a good selection of fish, salt water and fresh. Plus gator, crawfish, shrimp, etc., when in season. So if I'm going to do fish, I hit The Fisherman no more than 12 hrs before cookin time.
A side note...when I was working the oil field I came across an old black man walking down the county road dragging a burlap sack. Pulled over to offer the oldster a ride and come to find out he had a huge snapping turtle in the tow sack. Bitch must have been 20 lbs. I gave him a ride home and chatted with him while he cleaned it (to see how it was done correctly). Dude gave me a couple pounds of the good stuff. Had a goodly turtle soup.
