Don't forget to experiment. Grill/broil some chikun breasts with a cajun seasoning. Cut into strips. Roll the chikun into the tortilla with spinach and loads o hard cheese. Could use an enchilada sause or alfredo sauce for this. Seafood in da enchiladas! Crab, shrimp, fish....mmm mmm goodly with loads of cheese and a cheese/cream sauce over the top.
